This dairy-free grated ‘cheese’ can be sprinkled over gluten-free pasta, used to garnish soups, or added to salads. It’s a mix of healthy ingredients, including nutritional yeast (a source of protein and vitamins with a cheesy flavor) and wild Atlantic nori (a seaweed rich in minerals and trace elements with a slightly nutty flavor).
- 1 Cup raw cashew nuts
- 1/3 cup nutritional yeast flakes*
- 1/4 cup wild Atlantic nori
- Place all ingredients in a food processor and process for 30 seconds, or until the combined pieces become the size of grated dairy cheese.
- Place in a serving bowl with a spoon and use in place of grated dairy cheese. Sprinkle on Simple Tomato Soup, for example.

*Nutritional yeast is cultivated via beet and cane molasses fermentation, then dried and packaged. It is a deactivated yeast that should not be confused with brewer’s yeast or baker’s yeast, which is activated to make bread rise. Because nutritional yeast is deactivated it should be safe for those on a yeast-free diet, but check with your doctor to be sure it’s right for you.
